This is nice fresh dish and easy on the palate. I could sit in Spain with this on the patio with a nice bottle of Rose in the sunshine.... what? Oh sorry, i was miles away then, literally. Back to the recipe. It's a lovely dish for lunch or dinner just adjust the size to how hungry you are.
Allow a little time for marinating. from a half an hour to 4 hours in the fridge.
1 piece of salmon
salt & pepper
1 crushed clove of garlic
2 limes, zest & juice (just juice in the salad)
Mango pieces, diced
1 avocado, diced
1 red pointed pepper, diced
1 red onion, diced (just use half a one if you are not keen on onion)
Drizzle of olive oil
Mix the piece of salmon, salt & pepper, garlic, lime zest and juice and olive oil in a bag or small bowl, covered, and leave in the fridge to marinate for half hour to 4 hours, your preference.
When ready, prepare the salad by chopping everything up ready. To a bowl add the mango, avocado, red pointed pepper, onion, coriander, olive oil and lime juice. Mix well. Put in the fridge while you cook the salmon.
Take the salmon out of the fridge and the container or bag and while keeping as much marinade on as you can, dry fry in a frying pan turning over half way. if you prefer you can use the grill or an air fryer to cook it. Just follow the same instructions by turning over now and again to make sure it is cooked how you like it. Cook slowly so it doesn't dry out.
Present it on a fancy plate and enjoy the experience.
