2 Medium Chicken Breasts
300g Plain Flour
425ml Cold Water
1 Ltr Veg oil for frying
2 tsp Salt
1.m tsp White Sugar
1 pinch White Pepper
2.5 tsp Baking Powder
Cut chicken breasts into chunks, slightly big so they can be like balls you get from the Chinese take away.
Lightly simmer chicken breasts in water until cooked then leave to cool in the water.
Mix the rest of the ingredients into a bowl and whisk to create a thick batter.
Heat some oil into a wok type pan until 170 degrees Celsius.
Use metal tongs to pick up the chicken pieces and dip into the batter until it is covered. Carefully put it into the oil and fry until very lightly browned then drain on kitchen paper. Cook in two batches so the oil doesn't cool down too quick.
These chicken balls will feed about 3 people.
You can make this with pork or king prawns or spice them up by adding some chilli powder or paprika to the batter.
Make my sweet n sour sauce to have with these. Very yummy.
